SPINACH & THYME FARRO
Cook 1 cup quick-cooking farro per pkg. directions. Meanwhile, on rimmed baking sheet, toss 1 lb seedless red grapes, 6 small sprigs fresh thyme, 1 Tbsp oil and ¼ tsp each kosher salt and pepper. Roast at 400°F, tossing occasionally, until grapes begin to burst, 15 min. Scatter 1 bunch spinach (thick stems removed) over grapes and roast 2 min. more. Gently toss until spinach begins to wilt. Fold into cooked farro.
