“CARROT CAKE” OVERNIGHT OATS In small bowl, stir together ½ cup old-fashioned rolled oats, ¾ cup milk of choice, ¼ cup shredded carrots, 1 Tbsp raisins, ¼ tsp ground cinnamon, and a pinch each of grated nutmeg and kosher salt. Cover and refrigerate overnight. Top with ½ cup chopped roasted walnuts or pecans before serving.
