TIRAMISU Serves 8 PREP TIME: 45 minutes plus setting time Translated from the Italian, tiramisu means ‘pick me up’, and what better way to be picked up than with this rich, creamy, coffee liqueur-laced dessert? Tiramisu is traditionally made using only mascarpone cheese, but this requires pitch-perfect technique to keep the cheese from melting. So here’s our delicious, flop-proof version. 4 large eggs 200g castor sugar 1 tbsp vanilla essence 2 x 230g tubs cream cheese 230g mascarpone cheese 400g sponge finger biscuits (we used Boudoir biscuits) 1 cup hot, strong coffee for dipping ½ cup coffee liqueur cocoa for dusting 1. Cook with 1 tsp cinnamon, ¼ cup brown sugar, 3 tbsp water and 2 tsp vanilla essence, in a pan set over medium heat, until the sugar is dissolved and the apples are caramelised. Unroll 2 sheets of puff pastry and slice each into about eight 7,5cm squares. Pile 2 tbsp each of the mixture onto 8 squares, then brush the edges with egg wash and top with a pastry square. I went as far as getting a master’s in creative writing. But life had other plans for me.
