Golden brown Move over salted caramel. Brown-butter caramel is the new kid on the block. Just ask international coffee conglomerate Starbucks, who’ve made it one of their new frappuccino flavours. Why the fuss? Cooking butter slightly past its melting point yields a rich, intensely nutty flavour that sings with the sweet-bitter notes of a good home-made caramel sauce. Intrigued? Give it a whirl. BROWN BUTTER CARAMEL SAUCE Melt 6 T butter in a small saucepan over a low to medium heat, swirling the pan frequently until it separates and brown bits start to form at the bottom. “As a child, I spent many memorable moments in our kitchen alongside my late gran, Asa, learning how to make breads and rotis. It took me a while to master her roti recipe, as I was an impatient child and making roti is a labour of love – resting the dough is crucial. She told me to keep myself busy with the meal accompanying the roti instead of twiddling my thumbs. My first lesson in effective time management in the kitchen, for sure! YOU KNOW WHO YOU ARE. Even when you’re sitting in front of a roaring fire or there’s a juicy steak on the table, your hand remains glued to your glass of perfectly chilled Chardonnay. In celebration of Mother’s Day, I would like to start by admitting that my mom was right … about everything. About that friend not really being a friend, the value of hard work, wearing sunscreen and having savings. I now realise she did try to give me life’s cheat sheet. Butter should always be ice cold. You can even freeze it and grate it just before using. If possible, work on a cold surface. This will prevent the butter from melting as you work with it, which means your pastry will rise. Don’t add all the water at once, rather add it gradually until the mixture comes together and holds its shape. Always chill pastry before you use it so that steam will be released when it goes into the oven, forming those layers you’re after. Roll out pastry between two sheets of baking paper.
