COOK’S TIP FOR THE ULTIMATE POTATOES Raise your game with these hasselback duck-fat potatoes with olive-and-caper butter. Peel 10 large potatoes and slice them hasselback style. Cover with duck fat and roast at 180°C for 30–40 minutes until golden brown and crispy. Prepare the butter by placing 100 g salted butter, 15 pitted green olives and 50 g medium capers in a blender, blitz until combined but still quite chunky. I like washing up, I really do. I am not fanatical about it; it’s not as if I have set up a YouTube channel and dispense crockery and cutlery hygiene tips to the camera with my hands busily scrubbing away, forearms covered in suds. I recently tried the chilli-butter roasted kingklip (far right) with mash recipe (T155, November 2019) and it was absolutely amazing. The ingredients for this recipe are super-easy to source, all the spices are common in the everyday kitchen and one does not require any special techniques to master it. I added baby leeks to the butter-and-garlic mix, which I roasted with the kingklip. I also added lemon zest to the kingklip and fresh thyme to the mash. I was surprised by the new Woolworths frozen mashed potato, it tastes great and is extremely quick and easy to prepare.
