WHITE BEAN CONFIT

dried white kidney beans 325 g
olive oil 3 cups
garlic 3 cloves, peeled
small baby onion 1, halved
red chilli 1, halved
sea salt, to taste
vine tomatoes 350 g, roasted, for serving
fresh basil, for serving

1 Soak the beans in 8 cups of water for 8–12 hours, then drain. 2 Transfer to a heavy-based saucepan, cover with water and bring to the boil. Drain and rinse, then repeat. 3 Return the beans to the saucepan, cover with water and bring back to the boil.
