Chicken miso soup
A dieter’s dream – so low cal, yet so satisfying!
SERVES 2 PREP 10 MINS COOK 15 MINS
* 2 x 15g miso paste sachets (we used Clearspring)
* 1 uncooked chicken breast, sliced
* 1 garlic clove, peeled and crushed
*1/ 2 tsp freshly grated ginger
* 8 shiitake mushrooms, sliced
* Dash of tamari sauce
*1/ 4 savoy cabbage, finely shredded 1 Pour 600ml boiling water into a saucepan and whisk in the miso paste. Add the chicken, garlic, ginger, mushrooms and tamari sauce, then simmer for 10 mins. 2 Stir in the cabbage, and cook for 3 mins before serving.
Per serving: 139 cals, 1.5g fat (0.5g saturated) 7g carbs
