Meatballs with balsamic & chilli roasted vegetables A low-carb alternative to burger and chips – meat and five veg all in one tin SERVES 4 PREP 15 MINS COOK 25 MINS • 16 British beef meatballs• 1 red onion, chopped• 2 garlic cloves, crushed• 200g baby courgettes, halved lengthways• 2 red peppers, deseeded and cut into wedges• 350g butternut squash, cut into chunks• Few sprigs rosemary• 2tbsp olive oil• 2tbsp balsamic vinegar• 1tbsp sweet chilli sauce• 150g cherry tomatoes, halved 1 Heat the oven to 200°C, Gas 6.
