CHARLOTTE RUSSE SERVES 8-10 PREP 30 MINS COOK 5 MINS • ½ cup caster sugar • ½ cup orange-flavoured liqueur • 2 x 250g packets (25 biscuits) sponge finger biscuits • 1 litre vanilla ice-cream • 250g punnet strawberries, hulled, plus extra, sliced to serve • 300ml thickened cream, whipped 1 Line base of a 22cm springform pan with baking paper. 2 In a small saucepan, combine sugar and liqueur. Stir over low heat until sugar dissolves. Simmer 2-3mins, until slightly syrupy. 3 Cut 2cm from one end of each biscuit to make a flat base.
