Zucchini and Broccoli Soup SERVES 2-4 INGREDIENTS 3 tblsps olive oil 6 large zucchini 2 leeks 1 head broccoli, cut into small florets 1 tsp chilli flakes ½ tsp cumin 1 tsp sea salt 3 vegetable stock cubes TO SERVE Bunch parsley, chopped, and walnuts, crushed METHOD 1 Heat olive oil in a large stockpot.
