Grilled Spicy Salmon with Avocado Salsa SERVES 1 INGREDIENTS ½ avocado, peeled, de-stoned and diced 40g cherry tomatoes, halved Fresh coriander, chopped ½ lime, juice 1 tblsp extra virgin olive oil ¼ tsp dried chilli flakes ¼ tsp ground paprika 150g salmon fillet ½ lime, cut into wedges METHOD 1 Place the avocado, cherry tomatoes, coriander, lime juice and ½ tbsp of olive oil into a bowl.
