Ham, Spinach & Mozzarella Lasagne 1 HOUR | SERVES 4-6 INGREDIENTS 500g spinach 2 tbsp olive oil 4 garlic cloves, crushed 2 large trimmed leeks, washed and finely chopped 300g crème fraîche 250g grated mozzarella 300g ham, chopped 300g fresh lasagne sheets 2 tbsp finely grated parmesan METHOD 1 Put the spinach in a large colander and pour over a kettle of just-boiled water. YOU’LL NEED: • 5-10g kefir grains • Glass container • 250ml milk of your choice (ideally organic, grass-fed and full fat) • Paper towel, clean muslin cloth or coffee filter to use as a cover • 1 rubber band • Non-metal stirrer and strainer (stainless steel is OK) METHOD Combine the kefir grains and milk in a glass jar.
