Beetroot & Black Bean Open Burgers

INGREDIENTS
400g can black beans, rinsed, drained 425g can diced beetroot, well drained 4 green spring onions, finely chopped 2 carrots (150g each), coarsely grated 200g block Greek feta, crumbled ¾ cup self-raising flour 1½ tblsps harissa seasoning 2 eggs, lightly beaten Vegetable oil, for shallow frying 3 jumbo hamburger rolls, split Butter lettuce leaves, tzatziki, snow pea sprouts and sweet potato fries to serve METHOD
1 To make patties, place beans in a large bowl. Lightly crush with a fork. Add beetroot, onions, carrots, feta, flour and seasoning. Toss to coat. Add eggs. Season with salt and pepper. Mix well.
2 Heat enough oil in a large, non-stick frying pan, over a medium heat, to shallow-fry.…
