PROSCIUTTO-WRAPPED ANTIPASTO CHICKEN Serves 4, Prep 15 mins, Cook 18 mins WHAT YOU NEED 4 x 200g free-range chicken breast fillets, trimmed 200g antipasto mix, drained, chopped ½ cup fresh basil pesto 8 slices prosciutto (100g) Steamed snow peas, to serve 1 Cut a deep, long slit through the thickest side of each chicken fillet, without cutting all the way through.
