It used to be the case that if you wanted to know what Thai food really tasted like and a trip to Bangkok wasn’t imminent, you had to take the number 7 train to Woodside, Queens, to eat at a restaurant called Sripraphai. For the pad thai generation, this was revelatory food, with huge, ricocheting flavors and, if you nodded yes, devastating spice. Cold, raw shrimp were splayed on a plate and showered in fish sauce and bird’s-eye chiles; watercress, battered and fried to a shattering crisp, formed a nest for a sweet-tart seafood salad.
