FRIED RICE WITH EGG

Ingredients
1 cup basmati rice, soaked in water 4 eggs 4 Tavocado oil 1 onion, finely chopped 2 cloves garlic, crushed 1/2 red &yellow peppers each, finely chopped 150 g mushrooms, finely chopped 250 g green beans, finely chopped Salt and freshly ground black pepper 3 cups vegetable stock 1/2 cup white wine Method
1. Heat oil in a large pan. Fry onion, garlic, peppers, mushrooms and green beans on medium heat for 4–5 minutes, stirring constantly.
2. Drain rice and add to the pan. Fry for 5 minutes, stirring regularly. Season with salt and freshly ground black pepper.
3. Add stock and wine, and cook until rice is fluffy and all water is absorbed.
