First, heat the oil in a large pan over a medium heat. Add the onion, red pepper, celery and chilli flakes, and cook for three minutes. Next, add the sweetcorn, vegetable stock and coconut milk. Stir the smoked paprika into the mixture before covering it partially with a lid. Leave to cook for 10 minutes, making sure to stir it every now and then.
