Grits with Bacon, Thyme, and Egg
Makes 6 to 8 servings
8 slices bacon
1 cup stone-ground white grits
4 cups water
1 teaspoon chopped fresh thyme
1½ teaspoons salt
2 tablespoons butter
6 large eggs
¼ cup shaved Parmesan cheese
Garnish: fresh thyme leaves
1. In a medium skillet, cook bacon over medium heat until crisp, about 6 minutes; set aside. Pour bacon drippings into a medium saucepan, and add grits; stir to coat. Add 4 cups water, thyme, and salt; cook over high heat. Bring to a boil, reduce to a simmer, and cook, uncovered, for 30 minutes, stirring occasionally.
