The intensified sweetness of the vegetables works with a balsamic vinaigrette, which can be bulked out by the addition of crumbled ricotta. Think about adding extra flavour from nuts — smoked almonds and macadamias are my current favourites — or seeds, such as toasted pepitas, sunflower, cumin or coriander seeds.
