It’s very easy to double a soup recipe and freeze half, which makes it a great make-ahead option for quick reheating on chilly nights. However, there are some soups that freeze better than others. Pumpkin or sweet potato soups freeze well, but anything with pasta or starchy ingredients, like potato, tend to absorb too much liquid as they thaw and reheat. This can make the end result gluggy.
