500g lamb mince
½ cup couscous, cooked
1 onion, finely chopped
¼ cup chopped fresh coriander Grated zest, juice 1 lemon
1 egg, beaten
2 cloves garlic, crushed
1 birdseye chilli, seeds removed, chopped
2 tsp ground coriander
16 wooden skewers, soaked (see tip)
1 tbsp olive oil Pita bread, yoghurt, lemon cheeks, to serve

250g punnet cherry tomatoes, quartered
1 bunch fresh parsley leaves chopped
Juice 1 lemon
2 tbsp olive oil
