RECIPE KNOW-HOW: We use Australian standard measures. In liquid measures, 250ml = 1 cup. 1 BROWNING BASICS: Browning meat and vegetables before cooking them in the slow cooker caramelises the ingredients, releasing their flavours. 2 SUPER BOWLS: Some slow-cooker models have a removable sear bowl, so you can brown on the stovetop before transferring the bowl back to the slow cooker. SLOW-COOKED PASTA Pasta should always be cooked al dente, which means ‘to the tooth’ in Italian. When you bite into pasta, you should feel it between your teeth; if it’s soft and mushy and doesn’t need chewing, it’s overcooked. One of the tricks of cooking pasta in a slow cooker is to add it only towards the end of the cooking process.
