Base
, 125g Butter , 1x egg , 5ml oil , 125ml sugar , 2 cups self-raising flour , 5ml corn flour Filling
, 10ml flour , 10ml corn flour , 125ml sugar , 2x eggs (Separate the yolk) , 1 litre fresh milk , 10ml margarine , 5ml vanilla essence METHOD
• Cream the butter and sugar until fluffy and light yellow.
• Add vanilla essence and oil
• Add flour, corn flour and fold everything together.
• Roll out the base batter into mini tart moulds and bake until slightly brown.
To make filling
• Mix eggs, sugar, vanilla essence and milk in a saucepan and bring to boil while stirring continuously.
• Add in flour, cornflour and stir until thick.
