Sausage Calzones
2 (1-lb.) fresh deli pizza dough pieces3 Tbsp. extra-virgin olive oil, divided2 lb. ground sweet Italian sausage1 (28-oz.) can whole San Marzano tomatoes, drained2 garlic cloves, minced1 Tbsp. chopped fresh basil1 Tbsp. chopped fresh flat-leaf parsley2 tsp. chopped fresh oregano1 tsp. kosher salt½ tsp. black pepper16 oz. preshredded low-moisture part-skim mozzarella2 large eggs, lightly beaten1 tsp. waterFavorite jarred marinara sauce, for dipping
