2 large tomatoes (about 16 oz. total)6 center-cut bacon slices½ cup chopped yellow onion3 scallions, minced¼ cup finely chopped green bell pepper1 Tbsp. hot sauce1 tsp. kosher salt½ tsp. black pepper2 cups chicken broth1 cup uncooked long-grain rice¾ cup minced cooked ham (from 1 [8-oz.] pkg.)
1. Peel and seed tomatoes, capturing juices in a bowl. Coarsely chop to equal 2 cups, and add to bowl with juices. Set aside.
2. Preheat oven to 350°F. Heat a 12-inch cast-iron skillet over medium. Add bacon. Cook, turning occasionally, until crisp, about 10 minutes.
