Crab Cakes with Fried Green Tomatoes
Makes 12 crab cakes
1 cup plain bread crumbs, divided
1 large egg, lightly beaten
3 tablespoons mayonnaise
1 tablespoon fresh lemon juice
1 tablespoon chopped fresh parsley
1 teaspoon whole-grain mustard
1/2 teaspoon salt
1/4 teaspoon ground black pepper
1/4 teaspoon ground red pepper
1 pound lump crabmeat
1/4 cup vegetable oil
Fried Green Tomatoes (recipe follows)
In a medium bowl, combine 1/2 cup bread crumbs, egg, mayonnaise, lemon juice, parsley, mustard, salt, black pepper, and red pepper. Gently fold in crabmeat.
For each crab cake, form 1/3 cup crabmeat mixture into a 1/2-inch-thick patty.
