Brown Butter Whipped Potatoes with Sage
MAKES 6 SERVINGS
1 cup unsalted butter, cubed
3 tablespoons extra-virgin olive oil
2 sprigs fresh sage
4 pounds baking potatoes, peeled and cubed
1 tablespoon kosher salt, divided
²/ ³ cup whole buttermilk, warmed
½ teaspoon ground black pepper
Garnish: fried sage
1. In medium stainless-steel skillet, cook butter over medium heat until golden brown and has a nutty aroma, approximately 10 minutes. Pour into a small bowl; cover and set aside.
2. In a small saucepan, heat olive oil over medium-high heat. Add sage, and fry until crisp and lightly browned. Remove from pan, reserving oil, and drain; set aside. Add reserved oil to butter; set aside.
