BEIGNETS WITH CHOCOLATE-ORANGE SAUCE

6 tablespoons warm water (105° to 110°)1½ teaspoons active dry yeast3 cups all-purpose flour, plus more for dusting2½ tablespoons granulated sugar¾ teaspoon kosher salt¼ teaspoon ground nutmeg⅛ teaspoon baking soda¾ cup whole buttermilk, room temperature2 tablespoons unsalted butter, softened1 large egg, lightly beaten½ teaspoon vanilla extractPeanut oil, for fryingConfectioners’ sugar, for dustingChocolate-Orange Sauce (recipe follows)
1. In a small bowl, stir together 6 tablespoons warm water and yeast. Let stand until foamy, 5 to 10 minutes.
2. In the bowl of a stand mixer, stir together flour, granulated sugar, salt, nutmeg, and baking soda by hand. Add yeast mixture, buttermilk, butter, egg, and vanilla; using the paddle attachment, beat at low speed just until a dough forms.
