5kg organic turkey200ml vegetable oil
FOR THE DRY SPICE MIX
Seasonings (from Tropical Sun)200g All purpose200g Chicken seasoning50g Dry jerk seasoning20g Pimento (whole)10 cloves50g fennel seeds
FOR THE MIREPOIX
2 onions, sliced3 stalks celery, sliced15 cloves garlic, sliced75g ginger, sliced5 carrots, sliced3 leeks (white part), sliced2 red peppers, sliced½ bunch each thyme, rosemary10 bay leaves500g Tropical Sun Jerk Seasoning Paste2 scotch bonnet, sliced
1 Coat the turkey in the veg oil and then the dry mix, liberally. Leave to marinate overnight.
2 The next day chop the onion, celery, ginger, garlic, carrots, leek whites, scotch bonnet and red pepper and set aside.
