In 1877, prospector Ed Schieffelin was stationed at Camp Huachuca, AZ, as part of a scouting expedition in search of Chiricahua Apaches. Just out of the Air Force in 1962, I was skating at the local roller rink in my hometown of Newhall, California, when a pretty, dark-haired girl came in and started skating alone. I was a bit shy but found myself talking to her. I learned that her name was Carol Moss. She was 18 and had just moved to Newhall from Tennessee. We dated steadily for the next 21/2 years. We were in love but, to my surprise, when I asked her to marry me, she said no. She told me she was too young to get married. So we parted in 1964 with hurt feelings. The Morrill Act of 1862 established land-grant colleges and universities that boosted enrollment of women and low-income and rural students. The mandated programs focused on research and practical endeavors including domestic science. In 1876, Ellen Swallow Richards, a chemist and instructor at the Massachusetts Institute of Technology—and the first woman to earn a degree from MIT—helped establish the Women’s Laboratory at that institute, with courses that applied a scientific approach to domestic concerns. Starting in 1899, Richards organized an annual conference of educators in Lake Placid, New York. This group coined the term home economics and in 1908 formed the American Home Economics Association, later renamed the American Association of Family & Consumer Sciences. The hot dog on a bun became the base and, in Chicago’s ethnic neighborhoods, familiar ingredients got piled on. The result: Some call it a banquet on a bun, others just order one “dragged through the garden.” The toppings on a Chicago hot dog are said to impart five flavor profiles: salty, sweet, sour, bitter and umami or savory. Every small town in America had a tiny movie theater in the 1950s. In our hamlet of Hessville, Indiana, it was the Ace on Kennedy Avenue, sandwiched in between Janc Drugs and Vierk’s Furniture. Not so much a song as a bit of spoken comic nonsense, for nearly 20 years during vaudeville’s heyday, the “Richard routine” had been the mainstay monologue of African-American performer Dusty Fletcher’s act. Fred Harvey, a freight agent in the 1870s, traveled for work and saw an unmet need. He knew travelers would pay a fair price for good food served in a hospitable setting. After striking a deal with the Atchison, Topeka and Santa Fe Railway Co., Harvey opened a Harvey House eatery in 1876 along a rail line in Topeka, KS. By 1891, Harvey had created the first U.S. restaurant chain and owned 15 restaurants catering to the needs of western travelers. For the flakiest biscuits, be sure the butter is cold and cut in until about pea size. Brushing the shortcake with cream helps the sugar stay in place and gives the tops a rich golden brown color. Stir grated lemon zest, orange zest or ground cardamom into the biscuit mixture. Add a pinch of cinnamon and nutmeg to the sugar on top. No buttermilk? Use 4 tsp. of white vinegar or lemon juice plus enough milk to measure 11/4 cups; let stand for 5 minutes. Substitute other fruit for the strawberries—sliced mangoes or peaches and blueberries. During the last long stretch of World War II, the U.S. government made a novel pledge to its service members when on June 22, 1944, President Franklin D. Roosevelt signed the Servicemen’s Readjustment Act. With the new GI Bill, returning military members could count on paid school tuition, a monthly stipend and reduced interest payments on home, farm or business property loans. This singular piece of legislation provided economic stimulus and helped returning GIs to focus their future on education before employment. World War II devastated the Netherlands. During the war, my mom’s family helped Jewish citizens, and Dad and his brothers were forced into slave labor by the Nazis. When we set sail from Rotterdam, South Holland, to the United States in 1956, we felt very fortunate. The Servicemen’s Readjustment Act, that hallmark of social legislation, was born out of fear. Officials worried that the 16 million veterans returning from World War II would glut the job market, sinking the country into another depression. Though lawmakers knew something had to be done, they couldn’t agree on a veterans bill. Low-cost loans and paying for college had wide support, but few favored a year’s unemployment pay for returning GIs. The American Legion pushed for it, however, reminding Congress of the thousands of destitute, unemployed World War I vets who’d marched on the Capitol in 1932. Born in Budapest, Austria-Hungary, Samuel Ladany and his brother-in-law Emil Reichel studied sausage-making in Vienna. The pair arrived in Chicago, Illinois, in 1890, where three years later, at the 1893 Chicago World’s Fair/Columbian Exposition, they hatched a plan that showcased both their sausage-making skills and their moxie for marketing. THE CHOCOLATE BAR Strike, also known as The Candy Bar War, was an unusual episode in Canada’s history. It began when a boy stopped to buy a chocolate bar at the Wigwam Cafe in Ladysmith, BC, in 1947. He plopped his nickel on the counter, only to be told the cost had risen overnight to 8 cents. Within hours, outraged children of Ladysmith were picketing the increase of 60 percent, marching with homemade signs that warned “Don’t Be a Sucker” and “Don’t Buy 8¢ Bars.” A boycott spread across Canada that May. In Manitoba, store owners reported a day of no chocolate bar sales; in New Brunswick, kids pooled sugar rations to make fudge.
