TIME waits for no man, nor, indeed, railtours. The plethora of celebrity chefs and cooking programmes has affected the railtour market, as more passengers wish to avail themselves of alternative fayre to roast beef or roast lamb. Luxury charter providers, such as the Northern Belle and the Belmond British Pullman, nowadays offer a very different menu than could be found two decades ago, and this is already permeating to other operators catering for all genres.
This does not mean, however, that the roasts have been ditched – far from it, as there will always be passengers who stick to the same meal. Who, for instance, had heard of Bellini (a cocktail of Prosecco sparkling wine and peach purée or nectar) 20 years ago, now served with so many train meals…
