I’m not alone in admitting that I really enjoy the food that comes after the Christmas feasting is over, when usually there is plenty of leftover turkey, plus ham, vegetables, roast potatoes, Christmas pudding, cheese, panettone and the least favourite, abandoned chocolates. Beginning with Boxing Day, this is usually a much more relaxed phase when it comes to meals. For many of us it is staycation time, with loose timings when it comes to meal times, and so much less pressure.
In the post-Christmas days punctuated by board games, long walks and movie watching, I like to throw myself into using up everything in the fridge. The turkey carcass makes a fabulous stock for a risotto or a wonderful soup. The uneaten turkey meat is made into an easy fricassee…
