Around eight years ago, I was diagnosed with type 1 diabetes. I was in my 40s, so it was a bit of a shock I have always known that fresh food is good for our health and wellbeing. Only, as I searched online, there was a lot of information about type 2 diabetes, but very little on type1. We all know the impact food has on our health and the issues bad eating can cause.
