As the days get shorter and the nights become cooler, food to comfort and soothe gradually starts to creep into our weekly repertoire. And what could be more comforting than a golden pastry-topped pie or a show-off tart? The beauty of pies and tarts is the endless variety and, in this collection, we’ve pulled together some of our all-time favourites from the archive. There are trad pies like the chicken and bacon slab, or the melting cheese and onion, as well as something a bit different such as the beef pie with cheese and Marmite cobbler crust. For sweet fans the cherry pie is a stone-cold classic, and there’s a chocolate, caramel and peanut tart that has real wow factor. And, if you’re looking for a bit of extra help…

Cheese and onion quiche 1 HOUR 10 MINUTES | SERVES 4 EASY | V ready-rolled shortcrust pastry 300g butter for fryingspring onions 2 bunches, trimmed and finely choppedeggs 3whole milk 75ml cheddar 150g, grated green salad to serve 1 Heat the oven to 180C/fan 160C/gas 4. Use the pastry to line a 23cm tart tin, then trim it, leaving a little overhanging for shrinkage. Scrunch up some baking paper, then smooth out and lay over the pastry before filling with baking beans or dried beans. Honeyed fig and curd cheese tart 50 MINUTES | SERVES 6 | EASY ready-rolled puff pastry 230g circular or rectangular sheet curd cheese or ricotta 150g ground almonds 75gegg yolk 1golden caster sugar 3 tbsp purple figs 4-5 small flaked almonds 1 tbsp, toasted runny honey 1 tbsp 1 Unroll the pastry onto a baking sheet. Score a border 2cm in from the edge and prick the inside with a fork. Chill in the fridge for 10 minutes. 2 Heat the oven to 200C/fan 180C/gas 6.
