PULLED PORK ROLLS
INGREDIENTS
• 11/2 cups red cabbage, finely shredded• 1/2 green apple, cored, julienned• 2 green onions, finely sliced• 2 tbsp tarragon leaves• 1/2 bunch chives, snipped• 1/3 cup egg mayonnaise• 2 tsp lemon juice• 2 tsp salted baby capers, rinsed, chopped• 4 bread rolls, split• 2 cups leftover pulled pork, shredded METHOD
1 In a bowl, combine cabbage, apple, onion and herbs. 2 In a small bowl, stir mayonnaise, lemon juice and capers together. Season to taste. 3 Spread rolls with mayonnaise mix. Fill with shredded pork and apple salad.
