INGREDIENTS
• 2 tbsp extra-virgin olive oil• 1 medium onion, chopped• 5 medium carrots, sliced into rounds• 6 celery stalks, chopped• 4 garlic cloves, minced• 1 tsp fresh thyme, chopped• 1 tsp each salt and freshly ground pepper• 1 bay leaf• 10 cups salt-reduced chicken stock• 2 cups wide egg noodles, cooked• 3 cups barbecue chicken, shredded METHOD
