Cauliflower steaks with chimichurri Serves: 4 Prep + cook: 45 mins Ingredients • 1 large cauliflower, small leaves reserved • 2 tbsp olive oil • 1 cup coarsely chopped fresh flat-leaf parsley • 2 cloves garlic, quartered • 1 tsp sea salt flakes • ½ tsp dried chilli flakes • 2 tbsp oregano leaves • 1 shallot, chopped finely • ½ cup olive oil, extra • 1 tbsp red wine vinegar • 2 tbsp lemon juice • 3 heirloom tomatoes, sliced thickly • 125g baby rocket leaves Method 1.
