Rice pudding with strawberry syrup Serves: 4 Prep + cook: 50 mins Ingredients • 1 litre milk • 1 cup medium-grain white rice • 1/3 cup coconut sugar • ½ cup buttermilk • 400g strawberries • ¼ cup pure maple syrup • 1 lime, rind finely grated, then juiced • ¼ cup pistachios, chopped coarsely Method 1. Combine milk, rice and coconut sugar in a medium saucepan over high heat, bring to the boil. Reduce heat to low, simmer, covered, for 30 mins or until rice is tender.
