Berry moon rocks
Serves: 4 Prep + cook time: 15 mins (+ freezing)
Ingredients
â˘Â 250g small strawberries, with stems on â˘Â 175g blackberries â˘Â 125g raspberries â˘Â 400g Greek-style yoghurt â˘Â 1½ tbsp raw honey â˘Â 1 vanilla bean, split lengthways, seeds scraped â˘Â â

1. Place all berries, separated in a single layer, on a tray. Freeze for 30 mins.
2. Put yoghurt, honey, vanilla seeds and half the pistachios in a medium bowl. Add ½ cup frozen raspberries, crush against the side of the bowl with a wooden spoon. Stir to combine.
3. Using a toothpick, dip remaining frozen berries, one at a time, into the yoghurt mixture, place on a baking paper-lined tray. Freeze for 3 hours until coating is set. Cover remaining yoghurt mixture and refrigerate.
