Salmon cakes with apple salad Serves: 4 Ingredients • 415g can pink salmon • ½ cup whole-egg mayonnaise • 1 tsp finely grated lemon rind • 475g tub mashed potato • 2 tbsp finely chopped chives • ⅓ cup plain flour • 2 eggs, beaten lightly • 1 cup panko breadcrumbs • 60g ghee • 1 lemon, cut into wedges • ½ cup aioli APPLE SALAD • 2 tbsp white wine vinegar • ⅓ cup olive oil • 1 tsp Dijon mustard • 2 green-skinned apples, cut into matchsticks • 1 bunch red radishes, sliced thinly • 1½ cups packed coriander leaves Method 1.
