Mushroom & bacon risotto Serves: 6 Ingredients • 1 litre chicken stock • 200g bacon slices, chopped • 150g button mushrooms, sliced • 50g butter • 1½ cups arborio rice • 2 garlic cloves, crushed • 1 long red chilli, halved lengthways • ½ cup dry white wine or stock • 1 cup finely grated parmesan • Small basil or flat-leaf parsley leaves, to serve (optional) Method 1.
