Red rice inside-out rolls

Ingredients
• 1½ cups red rice (see tip) • ¼ cup sushi seasoning • 4 sheets nori • 1 large beetroot, peeled, cut into matchsticks • 6 radishes, trimmed, cut into matchsticks • 1 large carrot, peeled, cut into matchsticks • 2 lebanese cucumbers, cut into matchsticks • 1 large avocado, cut into matchsticks • Tamari, wasabi paste and pickled ginger, for serving Method
1. Rinse rice in a sieve, drain well. Add rice and 3 cups water to a medium saucepan, bring to the boil. Reduce heat to low, simmer, covered, for 35 minutes or until rice is tender and breaks down a little (overcooking the rice slightly will help the sushi hold together).
