Minestrone Beef and Potato Pie
SERVES 6 PREP & COOK 1 HOUR 20 MINS
■ 3 bacon rashers, rind removed, chopped
■ 1 large onion, finely chopped
■ 3 cloves garlic, crushed
■ 500g lean beef mince
■ 3 carrots, cut into 2cm pieces
■ 2 stalks celery, sliced
■ 1 tbsp dried Italian herbs
■ 700g jar tomato passata
■ 500ml carton beef stock
■ 400g can cannellini beans, drained, rinsed
■ 1½ cups shredded mozzarella
■ 900g bag frozen Potato Gems
1 Heat a large, deep, non-stick frying pan over a medium-high heat. Add bacon, onion and garlic. Cook, stirring, until bacon is light golden. Add beef. Cook, stirring to break up mince, for 5-8mins, until browned.
