Roasted Pumpkin, Pesto and Pine Nuts SERVES 6 PREP 20 MINS COOK 55 MINS ■ 3 x 800g whole butternut pumpkins ■ 2 tblsp olive oil ■ 150g Danish feta, crumbled ■ ⅓ cup pine nuts, toasted PESTO DRESSING ■ 1 cup firmly packed, fresh basil leaves (125g bunch) ■ 1 clove garlic, chopped ■ ¼ cup olive oil ■ 50g Danish feta, crumbled ■ 2 tblsp lemon juice 1 Cut pumpkins in half lengthways. Remove seeds. Place pumpkin, cut-side up, on a large oven tray. Drizzle with oil.
