Butter Chicken Pies
MAKES 10 PREP & COOK 1 HOUR
■ 5 sheets frozen puff pastry, just thawed■ Raita, to serve (see Tip) FILLING
■ 1 onion, finely chopped■ 500g chicken mince■ ¹/³ cup butter chicken paste■ 2 tblsps plain flour■ 2 tblsps mango chutney■ ½ cup frozen peas■ ¹/³ cup chopped fresh coriander leaves, plus extra to garnish■ ¼ cup natural yoghurt 1 To make filling, heat an oiled, large, non-stick frying pan over a medium to high heat. Add onion. Cook, stirring, for about 3 minutes, or until onion is soft. Add chicken. Cook, breaking up mince, for 8 to 10 minutes, or until browned. Add paste. Cook, stirring, for 1 minute, until fragrant. Stir in flour until combined.
