Raspberry Ripple Cake SERVES 12 PREP & COOK 50 MINS ■ 1 cup frozen raspberries (110g) ■ 300g unsalted butter, chopped, at room temperature ■ 1 cup caster sugar ■ 4 eggs, at room temperature ■ ¼ cup milk ■ 2 cups self-raising flour ■ Pink food colouring, to tint ■ Extra ½ cup frozen raspberries ■ Icing sugar mixture, to decorate 1 Grease a 19cm x 30cm lamington pan. Creamy Basil and Tomato Chicken SERVES 4 PREP & COOK 40 MINS ■ 500g chicken thigh fillets, trimmed, cut into 1cm strips ■ 2 tblsps olive oil ■ 1 onion, finely chopped ■ 1 litre (4 cups) chicken stock ■ 300ml carton pure cream ■ ¹⁄³ cup sundried tomato pesto ■ 375g casarecce pasta ■ Fresh basil leaves and grated parmesan cheese, to serve 1 Toss chicken with half the oil in a bowl. Season with salt and pepper. 2 Heat a large, deep frying pan over a medium to high heat. Add chicken in 2 batches. Cook, stirring occasionally, for about 3 minutes, or until browned. Chipotle Roasted Pumpkin SERVES 6 PREP & COOK 50 MINS ■ 1.5kg Kent pumpkin, with skin on ■ 2 tblsps olive oil ■ 1 tblsp chipotle seasoning ■ 1 tblsp honey ■ 100g smooth feta, crumbled ■ 1 long green chilli, deseeded, thinly sliced ■ ¼ cup pepitas, toasted 1 Cut pumpkin into 4cm thick wedges. 2 Combine oil, seasoning and honey in a large bowl. Mix well. Add pumpkin. Toss well to coat. 3 Arrange pumpkin, in a single layer, in a large, non-stick roasting pan. 4 Cook in a moderately hot oven (190C) for about 40 minutes, or until pumpkin is tender. Remove from oven.
