Lamb with Warm Sweet Potato Couscous
Serves 4, Prep and Cook 35 mins
600g lamb rump steaks, trimmed Rocket leaves and lemon wedges, to serve WARM SWEET POTATO COUSCOUS
600g sweet potato, peeled, cut into 2cm pieces 1 red onion, thickly sliced 1 long red chilli, thinly sliced 2 tblsps olive oil 2 tblsps pure maple syrup 1 cup chicken stock 1 cup couscous 1 To make warm sweet potato couscous, toss potato, onion, chilli, oil and syrup in a large roasting pan. Season with salt and pepper.
2 Cook in a hot oven (200C), stirring halfway through, for about 25 minutes, or until tender.
