Bacon and Avocado Brekkie Pizzas
Serves 4, Prep and Cook 15 mins
175g shortcut bacon rashers, chopped 2 large avocados ½ small red onion, finely chopped 1 tblsp lemon juice 4 English muffins, split, toasted ½ x 250g punnet cherry tomatoes, quartered Baby rocket leaves, to serve 1 Heat an oiled, medium non-stick frying pan over a medium to high heat. Add bacon. Cook, stirring occasionally, for about 3 minutes, or until crisp. Remove. Drain on absorbent kitchen paper.
2 Meanwhile, coarsely mash avocados in a bowl. Add onion and juice. Season with salt and pepper. Stir to combine.
3 To serve, spoon avocado mixture onto cut-side of muffins. Top with bacon, tomatoes and rocket.
