Apricot Galettes with Spiced Honey Cream Serves 4, Prep and Cook 40 mins 2 sheets frozen puff pastry, thawed 2 tsps unsalted butter, melted 1½ tblsps apricot jam 2 tblsps almond meal 6 ripe apricots (400g total), cut into quarters, stones removed 2 tblsps icing sugar mixture, plus extra to dust SPICED HONEY CREAM 300ml tub thickened cream 1 tblsp honey ½ tsp ground cinnamon ¼ tsp ground nutmeg 1 Sandwich pastry sheets together brushing in between sheets with butter. Smoked Salmon on Avocado Smash Serves 4, Prep 20 mins 1 Lebanese cucumber 2 Turkish rolls 200g sliced smoked salmon 1 tblsp baby capers Olive oil, crème fraîche, watercress sprigs and lemon wedges, to serve AVOCADO SMASH 1 large (300g) avocado ½ tsp finely grated lemon rind 1 tblsp lemon juice 1 To make avocado smash, peel and deseed avocado. Place in a bowl. Coarsely mash. Add remaining ingredients. Season with salt and pepper. Stir to combine. 2 Using vegetable peeler, peel cucumber lengthways into long, thin ribbons. 3 Cut rolls horizontally in half. Toast until golden brown. Spread avocado smash onto cut-side of rolls. Coconut Yoghurt Mousse with Pineapple Serves 6, Prep 30 mins 2 tsps powered gelatine 270ml can light coconut cream 100g fresh ricotta 1½ cups Greek yoghurt ½ cup light thickened cream ¹/ ³ cup caster sugar 2 egg whites, at room temperature PINEAPPLE 25g unsalted butter ½ large pineapple (650g), peeled, cored, cut into 1cm pieces 1 tblsp caster sugar 1 Sprinkle gelatine over 2 tblsps water in a small, heatproof jug. Stand jug in a small saucepan of simmering water. Stir until gelatine is dissolved. Remove. 2 Meanwhile, heat coconut cream in a medium saucepan until hot. Do not boil. Transfer to a heatproof jug.
