Slow Cooker Christmas Pudding
Serves 6-8, Prep and Cook: 6 hours, 35 mins
375g packet dried mixed fruit 1 Granny Smith apple (150g), cored, peeled, coarsely grated 200g packet red glacé cherries, finely chopped 1 cup sweetened dried cranberries ½ cup brandy Cooking oil spray, for greasing ½ cup firmly packed dark brown sugar ½ cup golden syrup 175g unsalted butter, melted 3 eggs, lightly beaten 1½ cups fresh breadcrumbs 1 cup self-raising flour 3 tsps ground cinnamon Thick vanilla custard, to serve
1 Combine all fruits and the brandy in a large bowl. Stand, covered, overnight.
2 Lightly spray a metal pudding steamer (8-cup capacity) with cooking oil. Line base and side of steamer with five 6cm-wide strips of baking paper.
